No.1 // Veal Beef Burger, Guacamole Topped with a Fried Egg
Note from Dan: This isn’t your every day burger, this bad boy is to be enjoyed when you can slow time just long enough to sit down and savor every single bite. I add guacamole to this burger when paired with Bellacosa. Why you ask? My answer- Why not?
Why it pairs well: Veal is such a tender meat, the silky texture of bellacosa is a match made, the guacamole brings out the light earth tones and the fried egg leaves you with a hearty, satisfied finish.
No.2. // Dr. Pepper Ribs with Sticky Bone Suckin’ Sauce
Note from Dan: These ribs might possibly be the best ribs I have ever or
will ever have. They are just that good. Although Bellacosa can be enjoyed in any glass, I suggest using a mason jar so that you can put your saucy covered fingers around it for better grip.
Why it pairs well: Ribs + Hearty Bellacosa = enough said.
No.3 // Papadella Wild Boar Ragu
Note from Dan: Ragu + Wild Boar… it was made for Bellacosa. That is all.
Why it pairs well: The succulence in the meat gives you the tongue shivers. Yes, I just said tongue shivers, I promise, it’s a good thing. The wild boar has a fatty layer to it that balances with Bellacosa with each and every sip.
No.4 // Open Fire Grilled Veggies
Suggested Veggies: Red, Orange and Yellow Peppers, Eggplant and Tamarind Cauliflower
Note from Dan: When trying this as a pairing, it was not planned, however after pairing these vegetables with Bellacosa, I wondered if Bellacosa was a vegetarian at heart. Seriously a delicious pairing.
Why it pairs well: When you openly fire roast the peppers and peel the charred skin, the roasted veggies bring the harmonious tannins out perfectly. The surprisingly versatile spice and balanced flavor of the Tamarind cauliflower bring out a subtle essence that is Bellacosa.
No.5 // Rack of Lamb… with Mint Jelly of course!
Note from Dan: Call me old school but I love me some mint jelly. I already knew that lamb paired well with Cabernet Sauvignon, however with Bellacosa on the table… the two become one.
Why it pairs well: As if the fruit tones weren’t apparent on their own, the lamb makes this pairing a fruit firework show from the start to finish.
